What Octane Do You use?

Actually, I used to work for NOS Automotive Chemicals, so I have a lifetime supply of octane booster in my garage.
Additional octane rating won't effect peak cylinder pressure - it just raises the detonation threshold to a higher pressure level.
Nitrous has the effect of "speeding up" the combustion process, so the engine needs less spark advance overall. Based on what I'm seeing on the spark plug ground straps, that effect is putting the peak in the cylinder pressure curve too early during the power stroke, building more heat and moving the blue "temper line" closer to the shell of the plug than I'd like to see. There's not enough heat to cause detonation, but the engine probably isn't making as much power as it could. Also, flattening out the pressure curve by taking out some timing will put less stress on the motor, even if the total output stays the same.
